### Measuring the oven against something that is not the oven

An oven that bakes badly is measured against an independent probe, never against its own display, because the display is repeating what the suspect part is telling it. The cavity is brought up and logged through several cycles, which shows both the average and the swing — an oven that averages correctly but swings thirty degrees ruins baking just as reliably as one that runs cold. From there it is a drifted sensor, a calibration offset, or a door and gasket leaking heat. The offset that gets set at the end is written down and left with you.

An independent probe through a full preheat and several cycles. The swing matters as much as the average.

Test the sensor cold

Resistance at room temperature against the specification for the model. A sensor out of range cold will be worse hot.

Check the sensor position

A probe touching the cavity wall or bent out of place by a roasting pan reads the wall, not the air.

Replace or calibrate as the measurement dictates

Not both, and not one hoping for the other.

Leave the offset written down

So the next person is not guessing, and so you know what was changed.

Worth measuring before assuming. Uneven results with a correct average often point at the convection fan, the rack position or a door not sealing square, and those are different repairs from a sensor.

### The oven is accurate but everything cooks differently since we moved.

That is real and it is not a repair. A different make and a different cavity size cook differently at the same setting, which is why the measured offset is more useful than a verdict — you get the actual numbers your oven runs at.
